Cayenne-garlic quinoa

Ingredients needed: Broth (I like to use veggie), Olive Oil, a handful Spinach, Cheese (This is Goat, but feta or Mozzarella would be nice also), 3 sun dried tomatoes, an onion (any color) 6-8 Brussels Sprouts, 3-5 gloves of garlic, 1 fresh tomato. Not Pictured: 1 green apple (a last minute addition) and a few mozarella balls, 1 cup Quinoa.

1. Chop onion and brussels sprouts.

2. saute in a pan with Olive oil. add sea salt and paprika (or any spice that you like).

3. when onions are carmelized add diced garlic. do NOT burn.

4. add vegetable broth until onions and brussels sprouts are covered (probably 3 cups).

5. bring to a boil, cover and turn down the heat.

6. prepare quinoa (mine takes about 15 minutes & I like to cook simmer my sprouts and onions for about this long)

7. dice tomatoes, cheese, & green apples. add sun dried and fresh tomatoes and cheese(s) to the pan.

8. the last few minutes add spinach to pan with onions and brussels sprouts.

9. add Quinoa to the pan and toss all ingredients together.

10. serve warm and add chopped Green apples to each plate.

my last minute decision after I tasted the Quinoa-it was spicy so I wanted something to balance it out.
